HOW TO BAKE A DATE AND WALNUT CAKE

INGREDIENTS:
Maida 240g
Baking pd 1tsp
Powdered sugar 240g
Margarine 160g
butter 80g
dates 240g
walnuts 12og
baking soda a pinch
eggs 6
vanilla essence 1 tsp

Method:Grease and line a cake tin. Sieve maida and baking powder at least 3 times. Soak dates in warm water with baking soda for 15 mins. Chop dates after removing seeds and chop walnuts the same size. From the sieved flour add some to the chopped dates and walnuts so that they are coated in flour. Take a bowl and add butter and margarine. Beat with a wooden spoon till soft and fluffy. Slowly add the sugar 1 spoon at a time.Beat till light and fluffy. Separate eggs. In the mixture add only egg yolks 1 at a time. Beat till creamy. Add vanilla essence and mix. Now take a metal tablespoon and fold in the date and walnut mixture.(Folding in means to use the spoon to cut into tbe mixture first at the centre from top to down and then turn clockwise.) Continue to add and fold in till the mixture is mixed well. Now do the same for the sieved flour, 1 spoon at a time. Do this till all the flour is used up. Prehaeat the oven at 180 degrees. Beat egg whites till stiff.(the whites should stand in peaks and should not fall when the bowl is turned upside down.) Fold in the stiffly beaten egg whites into the cake mixture 1 spoon at a time till all the egg white is used up. Pour the mixture into the greased and lined cake tin and bake for about 1 hr or till done. The cake will be done when a toothpick when inserted in the centre of the cake comes out clean.
